I don’t know about all of you, but mine is not the coolest of homes in the summer. Fans in the living room and A/C in the bedroom make it liveable, but turning on an oven is not high on my list of things to do in July. The problem is, I love to cook and bake. I keep a file of recipes I come across in the summer months that I won’t attempt until September or October, once the raging heat and humidity have died down (my apartment, I will say, is perfectly toasty in the winter months).
So, I use the heat of summer as something of a challenge, an impetus to finding new recipes that require either no cooking or nothing more involved than a grill. Here are a couple of my favourites:

With fresh mint and dill, tangy lemon, thick Greek yogurt and crisp cukes, you can’t go wrong with this blender-only cold soup. So tasty!

Barbecues are always a great summer go-to, and who doesn’t love eating outdoors, too? These shrimp kebabs are great on their own or as a prelude to more grilled goodness.

Nutella is my go-to favourite snack. Chocolate and hazelnut are a match made in heaven, and these super easy, super tasty little treats are great to make and share (though they do get a bit messy in the preparation).
