Ya’ll, I have had WAYYYYY too much to eat this weekend. We kicked off our Fourth of July celebration on Friday with my husband’s family and wrapped things up last night at my brother’s house. Here’s what I had to eat over the weekend:

Pork loin, mashed potatoes, fried squash, baked beans, fresh corn, corn salad, cole slaw, potato salad, steak, grilled chicken, baked potatoes, salad, cheese ball and crackers (not the whole thing, lol) homemade banana ice cream, lemon icebox pie, mudslide brownies, peach cake and pecan pie. I know there is more, but considering the hours I’m going to have to log in on the treadmill this week, I’m probably blocking it from my memory. The food, as always, was divine, largely in part of the fact that I didn’t have to cook it. (Although I did bring the cheese ball and made the banana ice cream.)

I have a wonderful tan from hours playing volleyball in the pool and floating mindlessly on a raft. My kids are equally as brown and were so tired at the end of the night they went straight to bed without incident. Interestingly, this morning I found a cell phone in my purse that didn’t belong to me and can only assume that my twenty-month-old neice helpfully put it in there for me. :-D All in all, our weekend was utterly fabulous.     Hi Rhonda! Early morning here too! We had a quiet holiday here but nice with the 4 of us! We cooked on the grill of course! I was not feeling well so hubby and son make too much meat (men!) and just had a couple of salads (yum). They are always taking the recipes of different ways of making the hamburgers from me and love when they did that. But these were the plain ground round and were great! Hope you had a good one too with your family and friends!

We had a wonderful weekend as well — Fri and Sat were pretty low key, which was nice, with a family party and went to the fireworks, and then Sunday was the first day with all day sun (been so rainy here!) so we spent the whole day outside, walked the dogs, kayaked (have the burned knees to prove it — forgot to put sunscreen there) and then sat in the sun (to even out the knees) and read and napped.

    The best thing I ate was probably Friday night steaks on the grill and some strawberry shortcake. The local strawberries have been great this year…

    Hi Rhonda! We had a wonderful weekend. Nice and quiet, just the way I like it. Sat. I tagged along with hubby while he vistited his hot spots. (Lowe’s and Marvin’s, LOL) And Sunday I vegged out on the couch, read and watched it rain most of the day. During the weekend I cooked a boston butt, ribs, potato salad, cucumber salad etc. and for dessert I tried your new brownie recipe. Yep, you were right. That stuff is wonderful!
    I’m off today and thinking I should clean house, but so far thinking about it is all I have done! ;-)

    I ate my way through the weekend also.
    There were two different Pizza benders, then deep fried Cheese curds at the local fair, and a gyro, with tons of fantastic Cajun music. Then more cheese.
    I’m not much of a dessert person, so I was able to pass on the fry bread, funnell cake, and deep fried cookie dough stands.

    I head a great 4th. I went to a picnic at my dad’s. We had hot dogs, hamburgers, potato salad, 2 different kinds of mac salad, baked beans, pasta salad, I made homemade brownies (got the recipe out of a love inspired book and they we yummy), 3 different kinds of pies. I did really well I didn’t go too far off my diet. Oh and at the bonfire we had chips and dip, cheese, crackers, and pepperoni, plus smores. I had a blast we spent the night, then had breakfast cooked on the grill in the morning.

    Glad to hear your weeknight was a blast!

    Mmm lemon icebox pie. I love that stuff!

    We’re not big 4th of July people… normally because it’s so flipping hot here by then. Plus the mosquitos. Ick. But this year it was unseasonably cool here so we got to enjoy the holiday weekend a lot more. Did the BBQ thing with family (hot dogs, burgers, chips, watermelon, bismarks and apple pie – YUM! Oh. And Bond. James Bond. He was on all weekend). Went to watch the local community fireworks show, then parked on a hill so we could see the surrounding towns’ do theirs. Ate popcorn. Had fun. Now it’s recovery time. :)

    I was hit with the flu and/or strep throat on the night of the 4th (still getting over it, so I’m confined to bed with the laptop), so no partying for me. But reading about all this tasty food is making me so hungry!

    I really had a very low-key 4th weekend. Didn’t really eat anything wonderful, but did spend a little time at the pool and lots of time reading and napping. Was able to raid my friend’s garden for some fresh squash and I plan on making a casserole tonight.

    So glad that everyone seemed to have a great weekend. I just spent an hour on the treadmill hoping to offset some of that wonderful food I ate. (Now I’m craving ribs–that was the one thing we didn’t have, lol.)

  10. We went to a Chinese restaurant and listened to Kate Smith sing “God Bless America.” Not many fireworks this year because of the drought.

    Roasted red pepper dip. Closely followed by chicken wing dip. I could live on dip and tortilla chips.

    We had a great 4th. Lots of family and fun. I hosted the shindig, but my husband’s family is so awesome I hardly had to make any food. It just arrives by the truckload as my relatives pull in the driveway!
