Woot! February has definitely brought a lot of Blazing Birthdays, hasn’t it? I’ll wind it up today
It’s cake day for me!! That’s my new term for birthdays, since I’d rather not get another year older
But I do love celebrations, and am definitely not willing to give up pressies, so I figure cake day covers all the bases.

And since it’s now officially cake day in my little world, let’s talk cake! I love cake. Chocolate is my hands down favorite, but I’ve been known to drool over a nummy carrot cake with cream cheese frosting. Moistness is key to deliciousness in my cake book. 
My love affair with cake even delved into decorating. Way back when, right after my youngest daughter was born, I took decorating classes. I decorated Blues Clues cakes. I decorated Scooby Doo cakes. I decorated teddy bear cakes (I think there’s a theme here). I even made a dude-in-a-recliner-with-the-TV-remote cake for Father’s Day one year. The best was the monster head on a platter cake
my brother and I made for my nephews’ birthday (sculpting isn’t my forte, so bro stepped in. I rocked the little carrots and tomatoes though!).
I was a decorating fool, right up until I started writing, when I found my ultimate (and much less fattening) source of creative outlet. Now I only haul out the decorating tips for the kids birthdays and the occasional party. Which means for cake day, someone else is has to be in baking mode. Which is
why I taught my oldest daughter how to make my absolute favorite cake a few years back – German Chocolate with coconut pecan frosting (say it with me, Yummmmmmmy).
I mean, a girls gotta make sure she’s got her cake love covered, right? So how about you? Are you a cake fan? What’s your absolute favorite cake? Is it a special occasion thing, or do you get to enjoy it often? And ya know, I’m always open to yummy cake recipes if you want to share any

Hi, Tawny! Great Cakes! My favorite cakes were the German Chocolate Cakes my grandmother used to make for me! Here is a wonderful recipe that has become one of my favorites:
Chocolate Gingerbread Squares
4 Tbsp butter (1/2 stick), melted
1/4 Cup unsweetened cocoa powder
3/4 Cup all-purpose flour
1 Tsp ground ginger
1 Tsp ground cinnamon
1/2 Tsp baking soda
1/8 Tsp ground nutmeg
1/2 Cup packed dark-brown sugar
1/4 Cup molasses
1 large egg
1/2 Cup sour cream
1 Tsp vanilla extract
1/2 Cup semisweet chocolate chips
confectioner’s sugar for dusting
Butter and lightly flour an 8-inch square baking pan. In a medium bowl, whisk together cocoa, flour, spices and baking soda. In a large bowl, whisk together butter, brown sugar, molasses, egg, and sour cream until smooth. Add flour mixture; stir just until moistened (do not overmix). Stir in vanilla extract and chocolate chips. Transfer batter to prepared pan; smooth top. Bake 30 to 35 minutes or until lightly firm to touch. When cool, sprinkle with confectioner’s sugar. Cut into 16 squares. Store in airtight container.

My absolute favorite cake is an Oatmeal cake and before anybody asks “Why in the world would you want to put oatmeal in a cake?”, it tastes like a spice cake sort of and is really moist. When I make them they are gone in like two days.
Here is the recipe:
Oatmeal Cake
1 cup oats
1 stick Butter
1 1/2 cups boiling water
1 cup brown suger
1 cup white sugar
1 tsp cinnamon
1 1/2 cups flour
1 tsp nutmeg
1 tsp baking soda
2 eggs
Topping
6 Tbls butter
1 cup brown sugar
1/2 cup condensed milk
1 can coconut
2 tsp vanilla
3/4 cup chopped nuts (I like pecans)
Mix oatmeal, butter and boiling water and let stand 20 minutes. Add 1 cup brown sugar, 1 cup white sugar, cinnamon, nutmeg and flour together and add to mixture. Finally add the eggs and mix well. Bake in a greased and floured 9 x 13 baking dish at 350 for 30 – 35 minutes.
mix filling ingreadents and spread over warm cake and place the cake back in the oven under the broiler until brown. But be careful the topping can burn easily.
My hubby asks for this cake every year for his birthday. He used to ask for carrot cake but once I made this one there was no looking back. AND yes, I eat cake off and on all year round. Sometimes more than others.

LOL on the head cake!
I’m known for my sliding cakes. One was captured on video as it slid apart. Sigh. The boys started asking for “cookie” cakes, aka giant cookies baked in a pizza pan. I just made a birthday pie for hubby.

In all honesty, I love all kinds of cake. It is very hard to choose a favorite, but there is a range of course. If I was to dig down deep inside, and choose, I would say that I love…drum roll please….GERMAN CHOCOLATE CAKE and RED VELVET CAKE! I know, it was so hard to choose between these two. GCC has everything I love in, and RVC has that moistness factor that is so critical to great cakes.

So light and fluffy – I think the secret was the chocolate whipped cream frosting between the cake and the coconut pecan layer. Oh man, delish!

I also like to make cakes. Some of the cakes I have done are; a princess castle, mickey mouse, snow white, a shirt and tie. a turkey wearing a football jersey holding a football, a McDonalds happy Meal box,a checker board game, an IPod, a 2 1/2 foot long Lego indiana Jones and some others. Every time I make one I try to do it bigger and better then the last one. Its fun! Although for a while there my kids were sick of cake, lol! Well I hope you have had a wonderful day. My specialty is cookie cakes, that’s usually what my family asks for on birthdays. My brother loves them so I make sure I always bake him one for his birthday. I’m not a huge cake fan, but absolute favorite cake is ice cream cake. My family gets me one for my birthday. Last year I had one that looked like a baseball. One cake I can’t eat is chocolate, just don’t care for the taste.
That head cake is awesome! I wish I talented like that.

Love the idea of a baseball shaped ice-cream cake. How fun!!! My husband’s absolute fave is ice cream cake. We have it every year for his birthday. One year, they had a dragon ice cream cake made for me (It was so cute!), even. I’m not a major ice cream fan, but that one was worth having

Hi!! Thank you -the cake was amazing! Soooooo creamy and moist, very delish and I’m sure very fattening. I had my one piece, and the rest is now GONE. I’d saved a piece for my husband, but sweetie that he is, he made sure to eat it before I got up this morning LOL.
